Harvesting herbs means gathering the usable parts of the plant, like leaves, stems, flowers, or roots, when they're at their peak flavor, aroma, and potency. The way you harvest depends on the type of herb and how it grows.

Leaves: Pinch or cut off individual leaves or stems as needed, leaving the stem intact to continue growing.

Stems: Cut off the entire stem, just above a node (where a leaf meets the stem), to encourage new growth.
